starting point of the process

Terroir : Chalky-clayey
Method of cultivation : Organic farming
First vintage: 1993
Grape variety: 60% Carignan,  40% Grenache noir
Average age of  the vines : 20 years
Yield: 40 hl/ha

Harvest:  The grapes are hand harvested
Winemaking :  In our cellar, the grapes are destalked, sorted and vinified traditionnaly using pumping-over and punching of the cap to extract more aromas and colors. The maceration last between 2 to 3 weeks. We also use a pneumatic press
Aging :  We age the wine in concrete tank for 18 months
Bottling: Start of february

Tasting notes:  We have on the nose some aromas of black fruits such as blueberry and blackberry with a hint of white pepper. On the palate, we have an interesting bitterness that is followed by cocoa and white pepper aromas.
Aging potential: 5 ans
